This American Wild Ale presents a complex interplay of stone fruit and warm spice. Initial impressions are dominated by the juicy, sun-ripened character of fresh peaches, seamlessly integrated with the aromatic warmth of cinnamon and the creamy, floral sweetness of vanilla beans. The Brettanomyces fermentation provides a dry, crisp foundation, contributing subtle notes of wet hay and tropical esters that enhance the fruit profile. Despite its naming, the palate is balanced by the spice and vanilla, leading to a refreshing, slightly acidic finish. It captures a nostalgic, pie-like essence while remaining light and effervescent on the tongue.
Appearance. Deep gold to pale amber (4–7 SRM). Pours with a moderate, white head that shows moderate retention, leaving light lacing. Slight haze is present from the addition of peaches and secondary fermentation.
Aroma. High intensity. Prominent ripe peach aromatics lead, followed closely by the sweet, woody scent of vanilla beans and a delicate dusting of cinnamon spice. Underlying Brettanomyces character offers earthy funk, wet hay, and a touch of pineapple. Low malt presence, mostly cracker-like or bready. No hop aroma.
Taste. Vibrant, tart peach flavor leads into a bright, crisp middle. The palate reveals smooth vanilla and a distinct but controlled cinnamon spice that provides depth without harshness. Low bitterness with no hop flavor. Fermentation character is very dry and funky with notes of leather and tropical fruit esters. The finish is highly attenuated and crisp with a lingering stone fruit and spice aftertaste.
Mouthfeel. Medium-light body with a refreshing, brisk carbonation. Very low alcohol warmth. The vanilla beans provide a perceived roundness that offsets the high attenuation and thinness typical of the style. Minimal astringency.
