This oak-aged blend presents a vibrant sensory profile defined by bright lemon zest and succulent peach notes, driven by a combination of two Brettanomyces strains alongside Lactobacillus and Pediococcus. The barrel aging imparts a delicate structure that supports a crisp, refreshing acidity. The result is a highly complex Wild Ale where the fruity esters harmonize with a developing funk and a dry, clean finish. This sophisticated Brett Beer exemplifies balance, offering layers of stone fruit and citrus against a subtle, woody backdrop.
Appearance. Pale gold (4-6 SRM) with a slight haze. A thin, white head forms with moderate persistence, eventually receding to a fine ring. Small, lively bubbles rise through the glass.
Aroma. High intensity featuring prominent stone fruit esters reminiscent of fresh peaches and apricot. Bright citrus notes of lemon zest dominate the foreground, supported by a mild, earthy Brett funk and a subtle hint of toasted oak. No diacetyl.
Taste. Initial impression is sharply refreshing with a clean lactic acidity. Flavors of tart lemon and ripe peach lead into a complex mid-palate of light cracker-like malt and faint wood tannin. Hop bitterness is very low, allowing the sourness to provide the primary balance. The finish is bone-dry and crisp with lingering citrus pith and a touch of funk.
