This Wild Specialty Beer presents a stunning visual and aromatic display, characterized by its vibrant magenta hue derived from red dragonfruit. The nose is greeted by an intense floral perfume of lychee, blending seamlessly with the funky, earthy notes of a complex wild fermentation. On the palate, a sharp but refined lactic acidity highlights the tropical lychee and the subtle, kiwi-like earthiness of the dragonfruit. Oak barrel aging contributes a delicate structure of vanilla and soft tannins, while the 7.9% ABV provides a well-integrated warmth. The finish is remarkably dry, leaving a lingering impression of exotic fruit and a clean, puckering tartness.
Appearance. Deep pink to vibrant magenta (10-15 SRM from fruit) with a slight haze. Pours with a thin, light-pink head that dissipates quickly, leaving minimal lacing due to high acidity.
Aroma. High intensity aromatics of fresh lychee and rose petals, backed by a complex wild funk featuring notes of damp hay and leather. Subtle lactic sourness and a hint of toasted oak provide depth, with virtually no hop aroma.
Taste. A sharp, clean lactic acidity leads the profile, followed by prominent flavors of sweet lychee and tropical fruit. The red dragonfruit adds a mild, earthy berry note. The malt character is minimal and crackery, allowing the oak-derived tannins and vanilla to provide a dry, structured finish. Aftertaste is fruity and acidic.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. A slight tannic astringency from the oak and fruit skins is present, along with a gentle, warming alcohol presence.
