A mixed culture saison brewed with patience, complexity, and a little wildness.
Our Bière de Saison is fermented with our house mixed culture, developed over time through blending, experimentation, and reuse. It contains a combination of saison yeast, brettanomyces, and a range of wild and commercial yeasts and bacteria – some isolated from our own barrels, others grown from local fruit, and still more sourced from beers we’ve enjoyed drinking ourselves.
Once the saison yeast finishes its work, the beer conditions slowly over weeks and months, as the wild organisms start to shape it further. What begins fresh and lively becomes something deeper and more layered over time. Beer Details Style: Saison Size: 330ml Malt: Maris Otter, wheat malt, oats
Yeast: House mixed culture – including brettanomyces, lactobacillus, pediococcus, and various wild strains We use seasonally available hops or fruit in our Saisons, please choose from the drop menu. Tasting Notes
Bright, tart, and dry, with a subtle spritz. Notes of lemon, grass, herbs, and the spice of saison yeast lead the way. A gentle sour tang provides a refreshing finish.
As it ages, expect the beer to develop further complexity – more fruit, deeper spice, and soft notes of leather, horse, and funk from the brettanomyces. Food Pairing Suggestions
This is a versatile beer when it comes to food:
Goat’s cheese or young bloomy rind cheeses (like Brie or Camembert) – the acidity cuts through the creaminess beautifully
Grilled white fish or shellfish – fresh flavours match the brightness of the beer
Cured meats – salami, prosciutto, or even pâté benefit from the beer’s cleansing tartness
Fermented vegetables – think sauerkraut, kimchi, or pickled radishes
Fresh sourdough with olive oil – simple, sharp, and well matched
