This elegant Saison represents a sophisticated blend of barley and wheat-based ales, aged for nine months in Chablis barrels from Domaine Long-Depaquit. The sensory profile is defined by a vibrant interplay between the rustic, grainy character of the cereal grains and the citrusy, floral brightness of Centennial hops. The barrel aging imparts a refined vinous quality, reminiscent of white wine acidity and subtle oak tannins, which complements the classic spicy fermentation notes. Effervescent and bone-dry, it delivers a complex aromatic bouquet of lemon zest, white pepper, and a mineral-driven finish that reflects its time in French oak.
Appearance. Pale gold (6 SRM) with a hazy, unfiltered appearance. Features a long-lasting, dense, rocky white head with significant Belgian lace and persistent effervescence.
Aroma. High aromatic intensity featuring a blend of white grape and vinous oak from Chablis barrels. Distinctive citrus and floral notes from Centennial hops mingle with peppery yeast esters, backed by a soft, grainy malt scent with hints of wheat and a subtle mineral edge.
Taste. Initial impression is bone-dry and refreshing. Flavors of lemon peel and floral hops lead into a mid-palate of cracked black pepper and soft, rustic grain. A moderate bitterness is present but balanced by a light, vinous acidity. The finish is remarkably dry and crisp, with a lingering spicy and woody aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation that creates a mousse-like effervescence. Features a very light alcoholic warmth and a slight tannic dryness from the barrel aging, with no astringency.
