Elevage is a masterfully complex fusion of a Sour Tripel and the vinous elegance of Roussanne Grapes. Aged extensively in Bourbon Barrels, this high-gravity ale presents a multi-layered sensory experience. The Roussanne Grapes contribute delicate notes of honeyed apricot and floral pear, which harmonize with the spicy phenols and fruity esters inherent to a Tripel base. The barrel aging adds a sophisticated layer of vanilla, toasted oak, and a hint of caramel. Despite its staggering 14.1% ABV, the profile remains brightened by a sharp, lactic acidity that cleanses the palate, echoing the structure of a fine sparkling white wine.

Appearance. Deep golden to light amber with brilliant clarity. Pours with a thin, white, fizzy head that dissipates quickly due to high alcohol concentration and acidity, leaving minimal lacing on the glass.

Aroma. High intensity. A sophisticated blend of white wine aromatics including apricot, honey, and floral jasmine from the Roussanne Grapes. This is backed by spicy Belgian yeast notes of clove and white pepper.
