The Bruery Terreux

Elevage is a masterfully complex fusion of a Sour Tripel and the vinous elegance of Roussanne Grapes. Aged extensively in Bourbon Barrels, this high-gravity ale presents a multi-layered sensory experience. The Roussanne Grapes contribute delicate notes of honeyed apricot and floral pear, which harmonize with the spicy phenols and fruity esters inherent to a Tripel base. The barrel aging adds a sophisticated layer of vanilla, toasted oak, and a hint of caramel. Despite its staggering 14.1% ABV, the profile remains brightened by a sharp, lactic acidity that cleanses the palate, echoing the structure of a fine sparkling white wine.

Appearance. Deep golden to light amber with brilliant clarity. Pours with a thin, white, fizzy head that dissipates quickly due to high alcohol concentration and acidity, leaving minimal lacing on the glass.

Aroma. High intensity. A sophisticated blend of white wine aromatics including apricot, honey, and floral jasmine from the Roussanne Grapes. This is backed by spicy Belgian yeast notes of clove and white pepper. The Bourbon Barrels provide a rich overlay of vanilla, coconut, and toasted oak, with a noticeable but well-integrated ethanol presence.

Taste. Initial impression is a bold, sharp tartness that quickly gives way to complex layers. The Roussanne Grapes offer flavors of stone fruit and melon, supported by a cracker-like malt base. Vanilla and charred oak from the Bourbon Barrels add perceived sweetness and depth in the mid-palate. Finishes exceedingly dry and crisp with a lingering lactic tang and a warming alcoholic glow. Bitterness is very low, as the structural balance is driven primarily by acidity.

Mouthfeel. Medium-full body with a surprisingly nimble feel due to high, effervescent carbonation. Significant alcohol warmth is present, reflecting its high gravity. No astringency, though the high acidity provides a bright, puckering sensation.

A Grape Ale egy Olaszországból származó sörstílus, ami egy erős átmenetet képez a sör és a bor között. A szőlő bármilyen fajta lehetséges, ami nem ritkán a teljes tartalom felét is képezheti. Jellemzően szénsavasabbak, a szőlő miatt pedig szárazabbak és savasabbak, de ezt a hozzáadott fajta is válogatja. Habár dominánsak a boros- naturboros jegyek a sörben, lambikhoz hasonló erős savasság nem jellemzi. Komplexitása abban rejtőzik, hogy a szőlő, maláták, komló és még az élesztő is szinte bármilyen típus lehet (pl. sörélesztő-borélesztő).
