Expect a dry, champagne-like finish where the influence of the wine barrel provides a structured tannic grip and a hint of white grape, reflecting the brewery’s signature natural approach.
Appearance. Deep gold to copper (8-12 SRM) with a slight, persistent haze. Pours with a moderate, off-white head that leaves delicate lacing; carbonation is visible.
Aroma. High intensity; complex Brettanomyces character featuring wet hay, horse blanket, and earthy leather. Prominent vinous notes from wine barrel aging suggest white wine and oak vanillin. Subtle herbal and floral hop notes mingle with apricot esters.
Taste. Bone-dry with a sharp, crisp delivery. Dominant funky flavors of barnyard and earthy spice are balanced by a faded citrus and herbal hop bitterness.
