This Brett Beer showcases the complex marriage of wild fermentation and local terroir. Brewed with hops from Sauvie Island and aged extensively in wine barrels, the 2019 vintage presents a sophisticated profile. Initial notes of rustic barnyard funk and aged hay give way to vinous oak and dried stone fruit. The wild yeast character is assertive yet integrated, complemented by a subtle herbal hop backbone that has mellowed over time. Expect a dry, champagne-like finish where the influence of the wine barrel provides a structured tannic grip and a hint of white grape, reflecting the brewery’s signature natural approach.
Appearance. Deep gold to copper (8-12 SRM) with a slight, persistent haze. Pours with a moderate, off-white head that leaves delicate lacing; carbonation is visible.
Aroma. High intensity; complex Brettanomyces character featuring wet hay, horse blanket, and earthy leather. Prominent vinous notes from wine barrel aging suggest white wine and oak vanillin. Subtle herbal and floral hop notes mingle with apricot esters.
Taste. Bone-dry with a sharp, crisp delivery. Dominant funky flavors of barnyard and earthy spice are balanced by a faded citrus and herbal hop bitterness. The wine barrel aging contributes toasted oak and a light grape-like acidity. Finishes very clean with a lingering rustic funk and a touch of peppery phenol.
Mouthfeel. Medium body with a high, effervescent carbonation that provides a prickly sensation. A noticeable but well-integrated alcohol warmth is present. Slight tannic astringency from the oak barrels adds structure.
