This Imperial Stout is an indulgent, galactic-scale collaboration, delivering a profound sensory depth driven by aggressive chocolate and roasted malts. A year spent in Bluegrass bourbon barrels imparts elegant layers of charred oak and vanilla, which weave through a base rich in espresso and dark cocoa. The addition of Zahidi date syrup elevates the profile with a sticky, concentrated dried fruit sweetness that perfectly counters the robust roast bitterness. At 11.8% ABV, the alcohol provides a refined, integrated warmth, resulting in a complex, velvet-textured masterpiece that lingers with notes of bourbon-soaked figs and bittersweet chocolate.

Appearance. Opaque, jet black (40 SRM). Pours with a thick, persistent deep tan head that leaves significant lacing. High viscosity is evident through slow-moving legs on the glass.

Aroma. Intense and multi-layered. Dominant aromas of bittersweet chocolate and heavy-roast coffee are complemented by the distinct sweetness of Zahidi date syrup. The barrel influence provides clear bourbon, spicy oak, and rich vanilla notes, with underlying esters of prune and black currant.

Taste. A massive initial impression of dark malt richness. Intense chocolate and coffee flavors meld with the syrupy, dark fruit character of Zahidi dates. Mid-palate reveals bourbon warmth and oak tannins. Bitterness is firm but balanced by significant residual sweetness. The finish is long, warming, and bittersweet.

Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate, enhancing the creaminess. Significant but smooth alcohol warmth is present without being harsh or solventy.

Al naso apre con un profilo ricco e stratificato, dove bourbon, vaniglia e cacao emergono con chiarezza, seguiti da cioccolato, malti tostati e richiami di frutta scura e dattero. In bocca l’ingresso è pieno, morbido e avvolgente, con corpo ricco e texture vellutata. L’affinamento in botti Bluegrass di bourbon aggiunge calore, rotondità e una sfumatura legnosa elegante, mentre lo sciroppo di datteri Zahidi amplia la componente dolce senza rendere il sorso eccessivamente stucchevole. La bevuta evolve su cacao, vaniglia, frutta secca e tostature misurate, chiudendo con una dolcezza vellutata ben bilanciata da un tocco di amaro torrefatto.
