Big Country is a decadent Imperial Scottish Ale that showcases a profound sensory depth following eight months of maturation in Auchroisk Speyside whisky barrels. The foundational Golden Promise malt provides a rich, honeyed sweetness, while crystal rye adds a layer of complex, peppery spice. Aromas of toasted oak and caramel transition into a luxurious palate of sticky toffee pudding, dark raisins, and fruitcake. Subtle notes of tobacco and a persistent, warming whisky character define the finish. This is a velvet-textured, full-bodied experience where the barrel influence harmonizes perfectly with the malt-forward intensity of a classic Wee Heavy.

Appearance. Deep copper to dark mahogany in color (22-30 SRM). It pours with a low to moderate, creamy tan head that shows modest retention. Clarity is clear with a brilliant garnet highlight when held to the light.

Aroma. High intensity. Rich malt aromas of caramel, toffee, and toasted breadcrumbs dominate, supported by deep fruity esters of raisin and plum. Significant barrel character presents as oaky whisky, vanilla, and a gentle peppery spice from the rye. Hop aroma is absent.

Taste. Initial impression is intensely malty and sweet. Flavors of Golden Promise malt provide a biscuity, honeyed foundation, while crystal rye adds subtle spice. Decadent notes of sticky toffee pudding, fruitcake, and raisins are prominent. Hop bitterness is low, providing just enough balance to prevent a cloying finish. The aftertaste is long and smooth, featuring lingering tobacco, charred oak, and warming Speyside whisky.

Mouthfeel. Full-bodied and viscous with a rich, creamy texture. Carbonation is low to moderate. A significant, well-integrated alcohol warmth is present, reflecting the 11.5% ABV without being harsh or fusel. Low astringency from the oak.
