This Wild Specialty Beer presents an explosive tropical profile driven by a massive addition of passionfruit and mango purée. The sensory experience begins with a bright, acidic burst of lemon and tropical stone fruit, softened by an aromatic vanilla presence that provides a dessert-like nuance. On the palate, the sharp, refreshing lactic acidity is expertly balanced by a subtle sea salt salinity that sharpens the fruit definition. While the vanilla adds a perceived creaminess, the finish remains crisp and dry. It is a vibrant, golden-hued sour that harmonizes complex wild fermentation notes with a lush, tropical fruit character and a savory, saline sparkle.
Appearance. Gleaming golden color (6-8 SRM). Slight yellow-tinted head with low to moderate retention and minimal lacing. Noticeable haze from the significant fruit purée and concentrate additions.
Aroma. High intensity aromatics dominated by fresh passionfruit and ripe, fleshy mango. A sharp lemon citrus note provides a bright top end, while a sweet, creamy vanilla presence rounds out the base. Very low malt character; no hop aroma; subtle funky or tangy notes from wild fermentation.
Taste. Initial impression is sharply tart and fruit-forward. Intense flavors of lemon and passionfruit provide high acidity, while mango offers a juicy mid-palate. Very low bitterness. A distinct sea salt character adds a savory dimension that enhances the fruit flavors. The finish is dry and acidic with a lingering tropical aftertaste softened by a hint of vanilla sweetness.
Mouthfeel. Medium body, feeling fuller than a standard wild ale due to the density of fruit solids and vanilla. Moderate to high carbonation provides a refreshing, prickly sensation. Very low alcohol warmth and negligible astringency.
