Struise Pannepot Reserva
Pannepot Reserva is an opulent Belgian Dark Strong Ale, elevated by extended maturation in French oak barrels. It presents a masterful synthesis of rich, bready-toasted malts and a unique, subtle roastiness reminiscent of a stout. The sensory experience is dominated by concentrated dark fruit notes of dried plums, figs, and raisins, woven together with elegant vanilla and fine woody tannins from the barriques. This flagship ale balances its high strength with a sophisticated vinous complexity and spicy yeast phenols, offering a lingering, contemplative finish that bridges the gap between a traditional monastery-style ale and a barrel-aged imperial stout.
Appearance. Deep mahogany to near-opaque dark brown; huge, dense, and persistent tan-colored head with exceptional lacing; slight haze present from yeast and barrel maturation.
Aroma. High intensity; complex layers of rich, bready-toasted malt, dark caramel, and a subtle hint of roasted cocoa. Pronounced esters of figs, dates, and black cherries are accented by peppery phenols and a distinct French oak character featuring vanilla and toasted wood. Alcohol is perfumy and well-integrated.
Taste. Initial impression is malty-rich and sweet, followed by deep flavors of caramelized sugar, toasted crust, and dark fruits. A subtle roasted grain character adds depth. Hop bitterness is medium-low, providing just enough structure against the malt, while the oak tannins and alcohol provide a warming, dry balance in the finish. Aftertaste lingers with notes of raisin and vanilla.
Mouthfeel. Medium-full to full body with a creamy, luxurious texture. Carbonation is moderate and smooth, not sharp. Noticeable alcohol warmth is present but remains soft and well-integrated, lacking any harshness.

The Pannepot Reserva was an idea from my brew colleague Carlo who wanted to age Pannepot in genuine French oak barrels (barrique 225 liters). We have brewed 90HL at the end of 2005 which has been aging on oak ever since (14 months). 30 Hl was bottled Tuesday 8th May 2007. 60Hl has been transferred now to second hand calvados oak vessels and will be bottled again early autumn 2007, we will name that batch Pannepot Grand Reserva. As quality and results rule at Struise, the Reserva was already brewed again and aging on oak.
