This Belgian Tripel presents a rounded, golden-blonde profile defined by its unique medieval "gruut" herbal blend. The aroma is a complex tapestry of peppery phenols and citrusy esters, accented by a distinctive, slightly smoky yeast character. A foundation of soft, honeyed malt provides a full-bodied entry that quickly gives way to a firm bitterness and a perfumed hop presence. The secondary bottle fermentation ensures a lively, effervescent mouthfeel that masks the strength. Despite its significant gravity, the finish is remarkably dry and clean, leaving a lingering trail of botanical spices and subtle warmth that defines this monastic-inspired ale.

Appearance. Golden to deep yellow (4.5–7 SRM). Brilliantly clear with a long-lasting, creamy, rocky white head that leaves significant lacing on the glass as it recedes.

Aroma. High intensity with a seamless bouquet of peppery phenols, citrusy orange and lemon esters, and a subtle, slightly smoky yeast note. The unique herbal gruut provides a distinctive spicy layer, backed by soft, honey-like pilsner malt and a light, perfumed hop character.

Taste. Initial rounded malt flavor gives way to complex spicy and fruity notes. Peppery and herbal phenols from the gruut blend with citrus esters. The beer features a medium-to-high bitterness accentuated by a very dry finish. The aftertaste is clean and lingering, showcasing a blend of spice and yeast-driven fruitiness without being sweet.

Mouthfeel. Medium body with high, effervescent carbonation. Despite the 8.7% ABV, the alcohol warmth is deceptively smooth and well-integrated. No astringency; the beer feels lively and crisp rather than heavy or cloying.
