Sentori olfattivi: al naso giungono profumi di malto caramellato e tostato, aroma da luppoli, floreale con delicati sentori amaricanti, frutta scura, toffee, legno, nocciola, liquirizia, spezie (noce moscata e cannella) ed agrumi (scorza di mandarino).
Corpo e gusto: corpo e carbonatazione media, al palato giungono inizialmente sapori dolci, caramellati e una leggera tostatura con toni di resina, seguiti da una sapidità di biscotti, frutta secca, frutta (mirtilli e bacche selvatiche), amaro da luppolo e spezie.
Finale: decisamente luppolato che rilascia un retrogusto leggermente tostato ed amaro. La Ruby Red inizialmente era una birra stagionale ma visto il successo di pubblico diventa presto una birra prodotta tutto l’ anno. Facile da bere.
Abbinamenti consigliati:
Ottima come aperitivo, formaggi dolci ma di buona stagionatura, piatti leggeri a base di carni bianche, verdure alla griglia o al vapore, insaccati, dolci al cioccolato, amaretti o torte alla frutta secca, noci.

St Peter’s Brewery è un birrificio indipendente situato a St. Peter South Elmham, nel Suffolk, , fondato nel 1996 da John Murphy, con l’intento di produrre birre di qualità ispirate agli stili tradizionali anglosassoni.
L’impianto di St. Peter’s si trova in posizione ideale, sopra ad un pozzo dal quale si estrae un tipo di acqua molto ricca di sali minerali. Il luppolo coltivato nel Kent e l’orzo dei campi adiacenti al birrificio permettono una filiera corta, con un controllo quasi totale della qualità delle materie prime.
La gamma produttiva è ampia, incentrata su stili classici a versioni stagionali prodotte con frutta e miele, in linea con le tradizioni inglesi del secolo precedente. Le birre di St. Peter’s sono facilmente riconoscibili per il tipo di bottiglia da 50 cl dalla forma che riprende il gin Gibbstown del 1700.
