St Feuillien Cuvée de Noël

Belgian Strong Ale 9 º 22 IBU
This Winter Seasonal Beer presents a regal profile, pouring a deep ruby brown with a dense, slightly brownish head influenced by the inclusion of roasted barley. The aroma is exceptionally intense, led by a festive blend of herbs and spices that harmonize with the rich, sugary depth of caramelized malts. On the palate, the beer is remarkably round and smooth, the result of a precise fermentation and extended cold maturation. Its full-bodied character delivers luxurious layers of toffee and dark fruit, balanced by a subtle bitterness. At 9% ABV, it concludes with a clean, sophisticated warmth and a lingering, elegant sweetness.
Appearance. SRM 25-35; deep ruby brown to dark mahogany. Generous, compact, and stable head with a light tan or brownish tint; excellent persistence and lacing. Brilliant clarity.
Aroma. High intensity with a complex bouquet of festive herbs and spices. Deep malt character of toffee and dark caramel is prominent. Low dark fruit esters resembling plum or dried cherry. Alcohol is smooth and supportive without being harsh. No significant hop aroma.
Taste. Rich and malt-forward initial impression with layers of caramelized malts and a hint of chocolate from roasted barley. Spicy herbal notes are well-integrated and supportive rather than overpowering. Hop bitterness is very low and subtle, providing just enough structure to balance the residual sweetness. Finish is smooth and round with a lingering toffee aftertaste and clean fermentation character.
Mouthfeel. Full body with a smooth, velvety texture. Carbonation is moderate to moderately high, providing a creamy sensation. Noticeable but well-integrated alcohol warmth that enhances the winter character. Low astringency.
