Esta es la historia de St Bernardus. En 1904 los monjes de la Abadía Catsberg en Mont des Cats huyeron de Francia para no pagar impuestos por sus negocios allí. Decidieron mudarse al norte de Bélgica, a la región de Watou. Originariamente se dedicaron a la elaboración de quesos que luego vendían para financiar su comunidad. Esta fabrica de quesos se llamo «Refuge Notre Dame de St Bernard».
Cuando en 1934 los monjes de St Bernardus deciden volver a Francia y venden su quesería a Evarist Deconincky. Junto a una licencia para elaborar sus cervezas por un periodo de 30 años. Junto al maestro cervecero de origen polaco, Mathieu Szafranski, comenzaron a elaborar sus cervezas siguiendo las recetas originales de los monjes. Utilizando además la levadura original. En 1962 la licencia se renovó por otros 30 años.
Es a partir de 1992 cuando los monjes toman el control de la producción de sus cervezas. Coincidiendo con la implantación del sello de calidad de las cervezas trapenses. Este sello solo se otorgaba a aquellas cervezas que se elaboraran dentro de los muros de una abadía. A partir de entonces, las cervezas de la cervecería se comercializaron bajo la marca St Bernardus. Este período estuvo marcado por la incertidumbre, ya que la cervecería se esforzó por revivir su fortuna e inyectar nueva vida a su marca.
Desde 1998 y hasta la actualidad, se ha pasado de una producción de unos cientos de miles de litros al año, hasta llegar a los 4 millones de litros de 2017. Esto requirió una buena cantidad de inversión, hasta ahora esto ha significado la apertura de un ala completamente nueva en 2018, donde han incorporado espacio para almacenamiento adicional, una nueva tienda de cervecería, un nuevo lugar para reuniones, conferencias y fiestas, una nueva recepción. área para visitas guiadas a la cervecería y, para colmo, una impresionante barra en la azotea de 360 ° que también sirve como sala de degustación y lleva el elocuente nombre de ‘Bar Bernard’.
