В самом отдаленном уголке Западной Фландрии в деревеньке с поэтическим названием Watou, где сама жизнь, как будто течет медленнее, и царит полная гармония с природой, рождается пиво St.Bernardus. История пивоварни тесно связана с двумя монастырями, один из которых подарил ей название, а другой — традиционные рецепты. В начале прошлого века из-за неблагоприятного отношения к монахам аббатство Catsberg, расположенное в южной части Франции, решило переехать в более лояльно настроенную Бельгию и выбрало для этого именно деревню Вату. Обосновавшись, монахи открыли сначала собственное сырное производство, которым славились еще у себя на родине. Наиболее известный сорт сыра носил название именно St.Bernardus Watou. Когда политика Франции в отношении монахов улучшилась, орден продал свое сырное производство Эваристу Деконинку и вернулся к своим истокам.
Господин Деконинк расширил свой бизнес за счет приобретения лицензии на производство пива у другого траппистского ордена — Westvleteren. Его партнером стал мастер пивоварения из этого же ордена Матье Зафрански, который предложил использовать древние монастырские рецепты, применяя при создании пива эксклюзивные технологии и ингредиенты. Одним из них является штамм дрожжей St.Sixtus. 46 лет пивоварня в сотрудничестве с монахами продолжала варить пиво, пока в 1992 году не истек срок лицензии. Монахи отказали в ее продлении, обосновав это тем, что только произведенное в стенах самого монастыря пиво можно назвать "траппистским". С этого времени пивоварня сменила свое название на новое Сент Бернардус и расширила ассортимент выпускаемой продукции за счет новых рецептов.
