This Straight Sour Beer offers a vibrant sensory journey, blending the sharp lactic acidity of a pale base with the lush, tart essence of fresh raspberries. The influence of the oak barrel is evident, not just through a delicate wood structure but via a unique Norman char that imparts a sophisticated, whisper-thin layer of smoke. Aromas of bright red fruit and biscuity malt precede a palate dominated by crisp acidity and raspberry pulp. Effervescent and bone-dry, it finishes with a lingering interplay between fruit tannins and a subtle, smoky earthen depth that elevates the refreshing blonde profile.
Appearance. Luminous pale gold with distinct ruby-pink highlights. Displays a fine, slight haze. Topped by a dense but fleeting white head with a faint pinkish tint and minimal lacing.
Aroma. High intensity; sharp, clean lactic sourness leads, immediately followed by prominent tart raspberry notes. Low background notes of campfire smoke and toasted oak emerge from the wood aging. Very low bready malt; no hop aroma or fermentation funk.
Taste. Dominant, clean lactic acidity provides a lemony backbone for intense raspberry fruitiness. A subtle, integrated smoky character persists through the mid-palate alongside light oak tannins. Malt flavor is minimal, suggesting crackery grains. Hop bitterness is undetectable; finish is exceptionally dry and tart.
Mouthfeel. Light-bodied with a crisp, refreshing acidity. Carbonation is high and effervescent. Alcohol warmth is absent at this gravity, providing a clean, mouth-watering finish without any astringency from the fruit or smoke.
