La birra è per il 95% acqua e l’acqua è in grado di influire sul mosto e sull’aroma delle materie prime. Alcuni stili birrai sono nati proprio grazie a un particolare tipo di acqua usata in origine.
La scelta del comune di Vaie, in Valle Susa, come sede del birrificio Soralama’ è stata fatta dopo un’indagine sulle acque della provincia di Torino. Un’acqua con queste caratteristiche di solito si trova sopra i 1.500 metri. L’acquedotto di Vaie attinge direttamente ad una fonte che presenta qualità oligominerali ottime, tanto che qualche tempo fa era imbottigliata come acqua San Michele. Questo ingrediente rende le nostre birre leggere e beverine.
Gli altri ingredienti che il Mastro Birraio Lorenzo Turco utilizza per le sue ricette sono selezionati e scelti con cura, che siano i malti di orzo, i luppoli, ma anche le materie prime del territorio come i cereali, le spezie e il genepy che caratterizza la nostra blanche Genny.
Il birrificio Soralama’ è un birrificio artigianale indipendente e produce solo birra cruda, viva, non pastorizzata. Per chi si avvicina a questo mondo, la differenza tra una birra artigianale e una birra industriale, si può paragonare alla differenza che c’è tra il pane di un fornaio, attento alle farine, ai lieviti, alla cottura, e i sostitutivi del pane che si trovano confezionati al supermercato.
