Pie Strings Theory is a vibrant collaboration between Sofia Electric and Ironic Brewery, capturing the essence of a lemon meringue pie within a Wild Specialty Beer. A bold 7% ABV supports a profile dominated by the zesty, aromatic punch of Tahitian lemon puree. The use of real Lacto bacteria provides a sharp, clean lactic acidity that cuts through the silky, unfermented sweetness of added lactose. Subtle doughy malt notes provide a pie-crust foundation, while the creamy texture mimics a whipped topping. The result is a high-intensity, dessert-inspired ale where bright citrus acidity and velvety sweetness achieve a playful, sophisticated balance.
Appearance. Bright, pale straw to sunny yellow (SRM 3-4); hazy to opaque appearance due to fruit puree and lactose; moderate white head with fair retention and slight lacing.
Aroma. High intensity aromatics of fresh-squeezed Tahitian lemon and lemon zest; secondary notes of sweet cream, vanilla, and powdered sugar from lactose; very low bready malt; clean lactic sourness with no hop aroma or funk.
Taste. Initial impression is a sharp, refreshing lemon tartness that immediately transitions into a rich, creamy sweetness. Deep Tahitian lemon flavor persists throughout. Malt provides a minimal biscuit or graham cracker base. No perceived hop bitterness. The finish is lingering and sweet-tart, perfectly mimicking lemon curd and meringue.
Mouthfeel. Medium-full body with a notable creaminess from the lactose; moderate carbonation provides a refreshing prickle; subtle alcohol warmth is present but well-integrated; smooth, non-astringent finish.
