High Times is an intricate Wild Ale that showcases the symbiotic relationship between Saison and Brettanomyces yeasts. This pale gold ale radiates a complex bouquet of white grape and dried floral tea leaves, underpinned by a rustic medley of orchard fruits and tart hedgerow berries. The Brett influence provides a delicate, earthy funk that persists through the finish, while maturation in oak barrels imparts a subtle, creamy vanilla texture and structural tannin. Exceptionally dry and effervescent, it balances a light, zesty acidity with the nuanced depth of wild fermentation, resulting in a refined, multi-layered experience that evolves with every sip.

Appearance. Gold to deep gold (SRM 4-7). Persistent, frothy white head with fine lacing. Slight to moderate haze characteristic of wild fermentation and minimal filtration.

Aroma. High intensity. Bright notes of white grape, green apple, and pear mingle with a distinct floral tea leaf character. Moderate spicy phenols from the yeast and a light, earthy funk suggestive of dry hay. Subtle creamy vanilla and toasted wood from the oak aging.

Taste. Initial impression is crisp and lightly tart. Prominent flavors of mixed hedgerow berries and white grape skin.
