This refined Saison showcases the transformative power of time and Missouri Oak. Emerging from a foundation of Saison du Fermier, it displays a complex aromatic profile defined by native microflora, offering layers of ripe apricot, lemon zest, and a delicate, rustic funk. The extended rest in Missouri Oak provides a sophisticated structure reminiscent of a Grand Cru White Burgundy, balancing a bright, vinous acidity with subtle vanillin and toasted wood notes. Effervescent and bone-dry, it marries earthy, peppery yeast character with a soft, grainy malt backbone, culminating in a long, elegant, and mineral-driven finish.

Appearance. Pale gold to light amber (6-8 SRM). It pours with brilliant clarity and produces a dense, ivory, mousse-like head with exceptional retention and intricate Belgian lacing. Highly effervescent.

Aroma. High intensity with a complex bouquet of lemon peel, white peach, and aged hay. The native microflora contributes a distinct but refined lactic tartness and earthy funk, complemented by the Missouri Oak's subtle vanilla and toasted almond notes. Soft, grainy malt and a hint of white pepper provide a sturdy base.

Taste. The initial impression is bright and vinous, featuring tart citrus and stone fruit flavors. A soft, grainy malt sweetness is quickly overtaken by a firm acidity and low-to-moderate hop bitterness. The Missouri Oak imparts structural tannin and a light woody spice. The finish is exceptionally dry, clean, and lingering, with a mineral-like quality and peppery aftertaste.

Mouthfeel. Medium body with a rounded, creamy texture derived from oak contact. Very high carbonation creates a lively, prickly sensation. A light, well-integrated alcohol warmth is present, while the tannic structure adds a pleasant, wine-like grip.
