Oude Du Blé is a masterful Saison that highlights the elegant interplay between Missouri Wheat and sophisticated barrel aging. This expression undergoes a mixed fermentation with local microflora and classic yeast, resulting in a profile defined by bright acidity and rustic charm. Thirteen months in Chardonnay French Oak barrels imparts soft, rounded vanillin and a light tannic structure, elevating the grainy wheat character. The sensory experience is lead by tart stone fruits, zesty lemon, and earthy funk, all underpinned by a delicate, vinous oak presence. It concludes with a signature dry finish and a lingering, complex tartness that defines the pinnacle of American farmhouse brewing.
