Appearance.Luminous pale gold with an SRM of approximately 6; slightly hazy due to being unfiltered. It supports a long-lasting, dense, rocky white head with exceptional Belgian lacing and high effervescence.
Aroma.High intensity bouquet featuring floral Vidal Blanc grapes, green apple, and apricot. Moderate spicy notes of white pepper from the Belgian yeast merge with earthy, funky local microflora and a subtle vanillin and toasted wood character from Missouri Oak.
Taste.Initial impression is bright and tart, leading into flavors of white grape skin, lemon zest, and dried hay. The Missouri Oak provides a firm, woody structure that complements the soft, grainy malt. Hop bitterness is low, allowing the vinous acidity and spicy yeast phenols to dominate through to an exceptionally dry, lingering finish.
