Loam (Vidal Blanc 2023) is a sophisticated Missouri Saison that bridges the gap between farmhouse brewing and fine winemaking. The marriage of Belgian yeast and local microflora creates a complex canvas of bright acidity and rustic funk, further elevated by the inclusion of freshly harvested Vidal Blanc grapes from the 2023 harvest. Expect a vibrant sensory profile of white peach, honeysuckle, and tropical pome fruit, underscored by the structured tannins of Missouri Oak. This elegant hybrid presents a lively, Champagne-like effervescence and a bone-dry finish, showcasing a masterful balance between vinous character and traditional grain-forward heritage.

Appearance. Luminous pale gold with an SRM of approximately 6; slightly hazy due to being unfiltered. It supports a long-lasting, dense, rocky white head with exceptional Belgian lacing and high effervescence.

Aroma. High intensity bouquet featuring floral Vidal Blanc grapes, green apple, and apricot. Moderate spicy notes of white pepper from the Belgian yeast merge with earthy, funky local microflora and a subtle vanillin and toasted wood character from Missouri Oak.

Taste. Initial impression is bright and tart, leading into flavors of white grape skin, lemon zest, and dried hay. The Missouri Oak provides a firm, woody structure that complements the soft, grainy malt. Hop bitterness is low, allowing the vinous acidity and spicy yeast phenols to dominate through to an exceptionally dry, lingering finish.

Mouthfeel. Medium-light to medium body with extremely high, effervescent carbonation. There is a noticeable but well-integrated alcohol warmth and a light tannic astringency from the oak and grape contact.

Loam Vidal Blanc es una Saison de Missouri en la que fermentamos una Saison con una cepa de levadura belga antes de trasegarla a roble de Missouri con nuestra microflora local para desarrollar las complejidades y los sabores de la casa. Cuando maduró, introdujimos uvas Noboleis Vidal Blanc recién recolectadas de la cosecha de 2023 en la Saison y la dejamos fermentar y envejecer hasta la madurez. Luego, esta Saison híbrida de cerveza y vino se acondicionó en botella para producir una carbonatación natural y cualidades vivaces similares a las del champán.
