Side Project’s La Ruche - 10 Year is a sophisticated Missouri Saison that showcases the delicate intersection of local microflora and Meadowfoam Honey. Fermented in a Missouri Oak Foedre, it presents an intricate aromatic profile of floral honey, soft vanilla, and toasted marshmallow, supported by a rustic, peppery yeast character. The palate is bone-dry and effervescent, revealing citrusy esters and a gentle, lactic tartness that balances the subtle wood tannins from the oak. This anniversary expression highlights the brewery's mastery of oak-aging, delivering a refreshing yet profoundly complex farmhouse ale with a lingering, crisp finish and a distinct sense of place.

Appearance. Pale gold (approx. 5 SRM) with a slight, hazy luminescence. Features a dense, long-lasting, rocky white head that leaves elegant Belgian lace on the glass.

Aroma. High aromatic intensity. A complex blend of fruity esters—lemon zest and pear—intertwines with spicy black pepper. Distinctive Meadowfoam Honey notes of vanilla and marshmallow are prominent, complemented by a rustic, earthy quality and subtle, woody oak.

Taste. Initial impression is exceptionally dry and refreshing. Soft, grainy malt provides a base for vibrant lemon and pome fruit flavors. The Meadowfoam Honey contributes a unique vanilla-like depth without residual sweetness. Moderate bitterness is balanced by a light, bright acidity from the microflora. Finishes clean and spicy with lingering floral notes.

Mouthfeel. Light to medium-light body with very high carbonation, creating an effervescent, prickly sensation on the tongue. No alcohol warmth is perceived at 5% ABV. Features a faint, pleasant oak-derived astringency and a crisp, bone-dry finish.
