Celebrating a decade of craft, this elevated Saison showcases the profound influence of Missouri Oak and the brewery’s signature Missouri cultures. An aggressive addition of 3.5 pounds of raspberries per gallon imparts a vibrant, jammy core that harmonizes with the rustic, spicy phenols of the base ale. The extended wood maturation provides a structured vanillin and soft tannin backdrop, tempering the bright acidity derived from the fruit fermentation. This profile delivers a complex sensory journey where the tartness of the berries meets the earthy, funk-forward complexity of a well-aged farmhouse ale, finishing bone-dry with a lingering, fruit-skin elegance.
Appearance. Deep ruby to vivid pinkish-red; long-lasting, rocky, light pink head with excellent lacing; hazy and unfiltered with visible effervescence.
Aroma. High intensity; dominant fresh and jammy raspberry notes layered over a complex fermentation profile of black pepper, earthy funk, and leather; soft vanillin and toasted oak nuances with a low, grainy wheat malt background.
Taste. Initial impression is a sharp, bright raspberry tartness followed by spicy yeast phenols and a rustic, earthy funk. Malt flavor is low and grainy, providing a soft palate for the fruit to shine. Bitterness is low, as the profile is balanced by lactic acidity and oak tannins. The finish is remarkably dry and highly attenuated with a lingering, tart berry and woody aftertaste.
