This double-decocted Munich Dunkel represents a cross-continental collaboration, blending deep Czech tradition with a modern American twist. The double-decoction mash produces a robust, bready foundation characterized by rich notes of toasted crust and dark chocolate. A subtle dry-hopping with Simcoe introduces a distinctive resinous top note that weaves through the traditional nutty and cocoa-forward profile. Expect a smooth, clean-fermenting dark lager where the earthy bitterness of the hops balances the malt depth, resulting in a refined finish that highlights both old-world technique and contemporary hopping.
Appearance. Deep mahogany with vibrant garnet highlights; crowned by a dense, creamy, light tan head with excellent retention. Brilliant clarity achieved through extended lagering.
Aroma. High malt richness dominated by toasted bread crusts and milk chocolate. Distinctive nutty undertones are accented by a moderate, resinous hop aroma from the Simcoe dry-hopping. Clean, cold-fermented lager profile with no esters.
Taste. Initial bready malt sweetness transitions into layers of toasted hazelnuts and chocolate. The Simcoe hops provide a unique resinous flavor that provides a modern counterpoint to the traditional decoction depth. Bitterness is medium-low but firm enough to ensure a clean, medium-dry finish with a lingering malt-rich aftertaste.
Mouthfeel. Medium-full body with a soft, creamy texture. Carbonation is moderate. Displays a smooth, well-conditioned lager character with zero astringency or alcohol warmth.

Při naší krátké návštěvě v newyorském Brooklynu jsme s Wild East uplatnili českou dekokci na americkou IPA, takže pro společnou várku u nás v Praze jsme také chtěli vymyslet způsob, jak ozvláštnit místní pivovarské postupy. Ve Wild East se rádi inspirují českou pivní tradicí, proto tmavý ležák na dva rmuty byl jasná volba, a proč si to nezpestřit lehoučkým studeným chmelením americkým Simcoe? Po dlouhých týdnech ležení z něj v pivu zůstala zajímavá pryskyřičná linka, která dotváří oříškové a čokoládové tóny tmavého ležáku.

USA collaboration. After brewing a decocted West Coast IPA during our visit in Brooklyn, NY, for Wild East’s visit in Prague we needed to come up with another twist to the local brewing tradition. Since they take a lot of inspiration from the traditional Czech processes and obscure styles, a double-decocted dark lager was just the right thing to brew, so why not add a light dry-hopping with Simcoe? After long weeks of lagering, it mellowed into an interesting resin note that complements the nuttiness of the classic chocolate-forward Czech lager.
