This Berliner Weisse offers a vibrant sensory journey, defined by a significant 9% raspberry addition that imparts a bright, tart berry profile without residual sweetness. The grain bill, featuring both wheat and oats, creates a delicate interplay between a creamy, smooth texture and a crisp, bone-dry finish. A sharp, clean lactic sourness cuts through the fruit, while the elevated carbonation enhances the beer's thirst-quenching qualities. Appearance. Pours a pale straw with a distinct pinkish-red hue from the raspberries (3-6 SRM). It displays a noticeable haze from the wheat and oats, topped by a large, dense white head with relatively poor retention. Highly effervescent.

Aroma. High intensity of fresh, tart raspberries and a sharp, clean lactic sourness. A light, doughy wheat character emerges in the background, reminiscent of sourdough or raw bread dough, with no detectable hop aroma.

Taste. Dominant clean lactic acidity is immediately followed by the bright, authentic flavor of raspberries. A grainy, bready wheat and oat base provides a soft malt presence. There is no perceived hop bitterness; the balance is firmly on the side of sourness and fruit. The finish is remarkably dry and crisp with a lingering tart berry aftertaste.

Mouthfeel. Medium-light body, feeling slightly more substantial than traditional examples due to the addition of oats and a higher alcohol content. Very high carbonation creates a spritzy, effervescent sensation, while the oats contribute a smooth creaminess. No alcohol warmth.
