Mama Hildegard reimagines the American Pale Ale with a sophisticated, regional twist. The addition of spelt provides a rustic, grainy foundation that supports the elegant, vinous character of Nelson Sauvin and Hallertau Blanc dry-hopping. Aromas of white wine and stonefruit are complemented by a subtle herbal twist from coriander seeds and a delicate floral lift from local honey. On the palate, the hop-forward profile delivers clean bitterness and lush fruit notes, balanced by a light, biscuity maltiness. This collaboration celebrates community through a modern lens, offering a crisp, refreshing finish that honors Bingen’s winemaking heritage.
Appearance. Deep gold to pale amber (approx. 7 SRM). Large, white, persistent head with fine lacing. Generally clear, though the inclusion of spelt may contribute a very faint, attractive haze.
Aroma. Moderate to high intensity. Distinctive notes of gooseberry, white grape, and crushed currants from Nelson Sauvin, paired with the floral and lemongrass character of Hallertau Blanc. A subtle spicy coriander note mingles with a light, nutty and grainy malt scent from the spelt. Very low floral honey sweetness in the background with a clean fermentation profile.
Taste. Initial burst of white wine, peach, and apricot flavors. The bitterness is moderate, providing a clean, firm counterpoint to the malt. Spelt contributes a rustic, bready mid-palate, while coriander adds a faint citrus-spice complexity. The honey is well-attenuated, leaving a hint of floral character that transitions into a dry, crisp finish. The aftertaste is clean with lingering hop resin and stonefruit.
Mouthfeel. Medium-light body with a slightly creamy texture from the spelt. Moderate-high carbonation provides a lively, refreshing prickle. Very low alcohol warmth; smooth finish without astringency.
