The sensory profile is defined by a foundation of raw bread dough and grainy wheat malt, which serves as a canvas for high-toned notes of lemon peel, tart green apple, and nuanced botanical spices. Appearance. Very pale straw color (2 SRM) with a light, persistent haze. Pours with a voluminous, dense white head that recedes quickly, characteristic of the style, over highly effervescent rising bubbles.
Aroma. High intensity of sharp, clean lactic sourness. Prominent notes of sourdough bread and raw wheat are complemented by tart lemon, green apple, and a delicate floral quality. The specialized spice blend adds a subtle herbal and earthy complexity that melds with the acidic fruitiness.
Taste. A dominant, clean lactic acidity provides immediate impact, balanced by a gentle doughy and grainy wheat malt backbone. No hop bitterness or flavor is present.
