El control sobre la fermentació és mínim. Els microorganismes i bacteris provinents de les flors i les fruites són els que tenen l’última paraula i determinen el perfil de la cervesa resultant.
Segons l’època de l’any, la barrica i els tipus de flors o fruites que utilitzem per fermentar, el resultat varia increïblement. I és just això el que volem: una mínima interferència en el procès per a que cada cervesa sigui única.
Les nostres birres no són només cervesa: són petites obres d’art irrepetibles. I la natura és la nostra imprescindible coautora.
