Present is a vibrant Straight Sour Beer that captures the essence of the Santa Pau landscape through its unique fermentation. Brewed with a foundation of barley and wheat malts, it is fermented exclusively with wild yeasts and bacteria harvested from local flowers surrounding the brewery. This process yields a clean but complex lactic acidity reminiscent of fresh lemon and tart green apple. Subtle floral nuances from the ambient microflora weave through a delicate, cracker-like malt backbone. Its high carbonation and dry finish emphasize the refreshing, sharp sourness, creating a bright, terroir-driven experience that remains crisp and incredibly approachable.
Appearance. Straw to very pale gold (2–3 SRM). Features a large, dense white head that typically exhibits poor retention. Clarity ranges from brilliant to a slight, attractive haze.
Aroma. High intensity of clean lactic sourness. Prominent aromas of lemon zest and tart apple are accompanied by a delicate, rustic floral note from the wild fermentation. The malt character is low, expressing soft bready and crackery scents from the barley and wheat base, with no hop aroma present.
Taste. Sharp, clean lactic acidity leads the palate, balanced by a subtle bready and biscuity malt sweetness. Flavors of citrusy lemon and under-ripe stone fruit are present. Hop bitterness is undetectable, allowing the sourness to dominate the balance. The finish is crisp and dry with a lingering, refreshing tartness.
Mouthfeel. Light-bodied and highly effervescent, providing a prickly, refreshing sensation. Alcohol presence is well-integrated and provides no significant warmth. Crisp acidity gives a clean, sharp mouthfeel without any astringency or vinegar-like harshness.
