Sacrilège Détente is a vibrant Straight Sour Beer that captures the rustic elegance of a Modern Farmhouse Ale. The sensory profile is dominated by the sharp, earthy tartness of blackcurrant and the bright, floral sweetness of raspberry, underpinned by a delicate, citrusy-herbal lift from verbena. Fermented with a complex house culture of wild yeasts and bacteria, it offers a clean yet layered lactic acidity softened by a subtle touch of oak and maturity from a small portion of barrel-aged blending. The result is a refreshing, effervescent ale where the brambly fruit character balances beautifully against a bone-dry finish and a lean, crackery malt backbone.
Appearance. Deep pinkish-red to light purple hue; hazy to opaque due to fruit additions and house culture. Large, pink-tinted head with moderate to poor retention; highly effervescent with visible carbonation.
Aroma. High intensity of sharp lactic sourness and punchy tart berries. Distinct aromas of fresh raspberry and earthy blackcurrant are primary, complemented by a lemony, herbal verbena note. Low bready malt and a faint, rustic funk from the house culture and barrel-aged component; no hop aroma.
Taste. Strong initial impression of clean lactic acidity and tart fruit. Flavors of acidic red berries and dark currants dominate, followed by a mid-palate of lemony verbena. Malt flavor is very low, providing just a hint of crackery support. Hop bitterness is undetectable. The finish is very dry and crisp with a lingering, puckering fruit skin aftertaste.
Mouthfeel. Medium-light body with a sharp, crisp acidity. High carbonation provides a spritzy, refreshing mouthfeel. Low alcohol warmth; very slight tannic astringency from the fruit skins and verbena.
