Sacrilège

This modern Farmhouse Ale presents a vibrant sensory profile driven by a complex house culture of wild yeasts and bacteria. The aroma is dominated by the signature Motueka hop profile, offering bright bursts of fresh lime zest and tropical fruit against a backdrop of rustic, spicy phenolics. On the palate, the beer is exceptionally dry and refreshing, balancing a firm hop bitterness with the grainy character of traditional Saison malts. Subtle tartness from the mixed fermentation enhances the fruity esters, leading to a crisp, effervescent finish that highlights both New Zealand hop innovation and traditional Belgian-inspired complexity.

Appearance. Pale gold (6 SRM) with a persistent, dense, rocky white head and excellent lacing. The appearance is characterized by a moderate haze, consistent with an unfiltered mixed-culture fermentation.

Aroma. High intensity aromatics featuring the lime and mojito-like qualities of Motueka hops. These are layered over moderate esters of lemon and pear, complemented by a spicy, cracked black pepper phenolic character and a subtle, earthy, wild yeast funk.

Taste. Initial citrus punch of lime and tropical fruit followed by a light, grainy malt character that quickly yields to a very dry finish. The bitterness is firm and hop-forward. Fermentation character provides a complex interplay of peppery spice and a very faint, clean lactic tartness that enhances the fruit profile.

Mouthfeel. Medium-light body with very high, effervescent carbonation. No alcohol warmth is perceived at this strength. The finish is crisp and highly attenuated with no lingering sweetness or astringency.
