Sacrilège

Sacrilège Le Pic is a vibrant Grape Ale that bridges the gap between wild fermentation and fine winemaking. Utilizing a complex blend of Carignan, Syrah, Grenache, Mourvèdre, and Cinsault pomace, it offers a sophisticated profile of dark berries and rustic earthiness. Spontaneous fermentation from indigenous grape yeasts provides a racy, moderate-to-high acidity that brightens the palate. Six months in used oak barrels adds subtle structure and a hint of tannin without overshadowing the fruit. The result is a crisp, effervescent, and deeply fruity experience with a bone-dry finish that emphasizes the unique character of the 2021 harvest.

Appearance. Deep ruby to burgundy hue with brilliant clarity. Pours with a thin, pink-tinted head that displays moderate-to-low retention, eventually settling into a fine collar.

Aroma. High intensity with a complex bouquet of red and black fruits, notably blackberry and plum. Distinctive rustic notes of earth, leather, and light tobacco emerge from the red grape varieties. A clean, sharp lactic acidity is present, alongside very subtle vanillin and toasted wood from the oak aging. Hop aroma is absent.

Taste. The palate is led by a bright, racy sourness that highlights flavors of tart cherry, cranberry, and dark grape skins. Supportive but minimal pale malt provides a neutral canvas for the fruit. Complex phenolic notes of spice and earth blend with a touch of wood tannin. Bitterness is very low, finishing exceedingly dry and crisp with a lingering vinous aftertaste.

Mouthfeel. Medium-light body with high, sparkling carbonation that enhances the racy acidity. A slight tannic grip from the grape pomace and oak adds structure. Very light alcohol warmth is well-integrated into the tart profile.
