Evolution by Rec Brew is a vibrant American IPA that masterfully bridges classic and modern hop profiles through a purposeful dry hopping of Mosaic and Chinook. The sensory experience is led by an assertive bouquet of ripe blueberries and tropical mango from the Mosaic, grounded by the distinctive resinous pine and grapefruit zest of Chinook. At 6.3% ABV, it presents a bright gold hue and a clean fermentation profile that allows the hop complexity to take center stage. A supporting layer of pale, grainy malt provides just enough structure to balance the firm, lingering bitterness, resulting in a crisp, refreshingly dry finish.
Appearance. Deep gold to light amber (7-9 SRM) with brilliant clarity and a persistent, medium-sized white head that leaves fine lacing.
Aroma. High hop intensity featuring a complex blend of tropical fruit, berry, and citrus. Mosaic contributes notes of mango and blueberry, while Chinook adds a sharp, resinous pine and grapefruit character. Low, clean, grainy maltiness supports the aromatics with a neutral profile.
Taste. Bold hop flavors dominated by resinous pine, grapefruit, and tropical fruit. The bitterness is medium-high and firm but remains clean. A low, supportive malt character offers hints of bread and light toast. The finish is dry to medium-dry with a lingering, hoppy aftertaste and no harshness.
Mouthfeel. Medium-light to medium body with a smooth, non-astringent texture. Carbonation is medium-high, providing a crisp mouthfeel. A very light, smooth alcohol warmth is present but well-integrated.

Evolution is a West Coast IPA coming at 6.3% ABV. Tasting Notes: Evolution is a copper-colored West Coast IPA-style craft beer, dry-hopped with Mosaic and Chinook hops. The aroma highlights the resinous and pine notes typical of the West Coast IPA style, as well as hints of citrus, lemon, and, to a lesser extent, tropical fruit. With the first sip, we notice that it's very well balanced. Its 40 IBUs of bitterness are well integrated with the malts and hops. On the palate, we again find resinous and herbal notes, along with the more citrus and tropical notes of the Mosaic hops.
