This Imperial Stout is a decadent sensory journey, drawing deep influence from its pastry stout lineage. It presents an intense aromatic profile dominated by the influence of Cape Byron Distilling whisky barrels, weaving together threads of spicy oak and rich vanilla. The addition of Tahitian vanilla beans enhances the creamy, sweet bouquet, while a massive wave of toasted coconut provides a confectionary-like depth reminiscent of a chocolate truffle. On the palate, it offers layers of bittersweet dark chocolate and charred malt. The high alcohol provides a smooth, integrated warmth that rounds out the lush, velvety finish of this complex, barrel-aged masterpiece.
Appearance. Jet black and opaque (SRM 40+). It pours with a dense, dark tan head that shows moderate retention, leaving prominent oily legs on the glass due to high viscosity and alcohol content.
Aroma. High intensity with a complex blend of toasted coconut and sweet Tahitian vanilla. The malt base provides deep notes of dark chocolate, espresso, and black licorice, while the whisky barrels contribute oak, caramel, and a noticeable spirituous warmth. Low esters of dried figs.
Taste. Intense and rich initial impression of chocolate-covered coconut. The malt flavor is deeply roasty with cocoa and burnt sugar, balanced by the creamy sweetness of Tahitian vanilla. Moderate bitterness from roasted grains is present but softened by residual sugars. The finish is long, lingering with toasted coconut and warming whisky notes.
Mouthfeel. Full and viscous body with a chewy, velvety, and luscious texture. Carbonation is low. A significant, smooth alcohol warmth is present throughout without being harsh or solventy.

Rituals I is a rich and decadent Imperial Pastry Stout, aged in Cape Byron Distilling whisky barrels, then conditioned on toasted coconut, and Tahitian vanilla beans. This is everything we'd hoped for our Barrel-Aged Ritual sibling. It can really only be described as a boozy Golden Rough on steroids. On both the palate and the nose rich and warming barrel notes come shining through, before coconut slowly develops on the senses and creeps through to a crescendo of toasted crunchy coconut. After the toasted coconut comes a chocolate and vanilla hit, before smooth and rich whisky notes take over for the finish.
