Appearance. SRM 14–20; amber to reddish-copper. Dense, persistent off-white head with fine lacing. Noticeable yeast-derived haze due to bottle refermentation.

Aroma. Moderate-high intensity. Rich malt aroma featuring toasted bread, caramel, and dark honey. Subtly hopped with herbal and floral notes. Yeast-driven esters suggest dried plum and cherry, integrated with faint holiday spice character.

Taste. Rich initial impression of toasted malt and caramel sweetness. Hop flavor is subtle and herbal, while hop bitterness is firm and more pronounced than typical for the style. Fermentation character is clean but fruity. Finishes full and satisfying with a lingering, pleasant bitterness and a touch of drying alcohol.

Mouthfeel. Medium-full body with a creamy, voluptuous texture. High carbonation from bottle conditioning provides a lively scrub on the tongue. Smooth, supportive alcohol warmth without harshness.

La Quintine de Noël es una Christmas Ale belga, elaborada por Brasserie des Légendes. Elaborada con maltas tostadas y caramelizadas, canel y clavo.

Su historia se vincula al folclore de la bruja Quintine de Ellezelles.

Su color es rojo ámbar, con abundante espuma, generosa y cremosa a la vez que persistente.

El aroma es de maltas tostadas, caramelo, especias y con un toque afrutado.

Su sabor es pronunciado de caracter amargo, equilibrado por dulzor maltoso y especias cálidas.

De cuerpo medio alto, textura cremosa, final seco, especiado y ligeramente amargo. Brasserie Ellezelloise fue fundada en 1993 por Philippe Gérard en Ellezelles. En 2006 se fusionó con la Brasserie des Géants, formando la actual Brasserie des Légendes. La gama Quintine se inspira en la leyenda de Quintine, una bruja de Ellezelles quemada en 1610, parte del folclore local. Hoy, la cervecería mantiene métodos tradicionales de fermentación y se ha consolidado como referente en cervezas belgas artesanales con distribución internacional.
