Cervezas Artesanas Quijota

Quijota Rubia is a delicate Kölsch that captures the traditional spirit of Cologne through a Spanish lens. Brewed with local Manchegan barley and Noble German hops, it undergoes a long cold maturation to achieve brilliant transparency and a clean, lager-like profile. The sensory experience opens with a soft, grainy-sweet malt backbone and a whisper of honey, quickly joined by subtle fruity esters reminiscent of crisp apple and pear. A gentle floral and herbal hop presence provides a balanced, medium-low bitterness. This top-fermented ale finishes remarkably dry and refreshing, offering a soft, rounded palate and a crisp, clean aftertaste.

Appearance. Light gold (4 SRM). Delicate white head with moderate retention and light lacing. Brilliant transparency achieved through extended cold lagering.

Aroma. Low intensity grainy-sweet malt with a touch of bready character. Subtle fruity esters of apple and pear. Low floral and herbal hop aroma from the Noble German hops. Clean fermentation profile.

Taste. Initial impression is a soft, grainy malt sweetness from the Manchegan barley. Balanced by medium-low floral hop flavor and a gentle bitterness. Subtle fruitiness adds complexity. Finish is soft, dry, and slightly crisp, with a clean aftertaste.

Mouthfeel. Medium-light body with medium-high carbonation. Very smooth and soft on the palate, well-attenuated with no perceived alcohol warmth.
