Quijota IPA
Quijota IPA presents a striking balance between traditional structure and vibrant American IPA character. Pouring a clear, attractive shade between gold and copper, it is crowned by a dense, creamy ivory foam with excellent persistence. The olfactory profile is dominated by intense citrus zest and fresh herbal notes, which transition into a palate where hop bitterness takes center stage. This assertive bitterness is softened by a medium-bodied foundation of lightly toasted malt and subtle fruity esters. Despite its punchy hop presence, the finish remains clean and avoids harshness, making this a rounded and approachable example of the style that remains remarkably easy to drink.
Appearance. Deep gold to light copper (8–14 SRM). Brilliant transparency with an abundant, creamy, and highly persistent ivory head that leaves decorative lacing.
Aroma. High intensity hop aroma featuring prominent citrus and herbal characteristics. A medium-low malt backing provides hints of toasted grain, while the fermentation profile is clean with only a subtle hint of fruity esters.
Taste. Initial hop-forward impression with a firm bitterness that acts as the protagonist. Flavors of citrus and resinous herbs are supported by a medium-low malt sweetness featuring light toasted notes. The balance is decidedly bitter but rounded by fruity esters, leading to a clean, moderately dry finish without a lingering or harsh aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Medium-high carbonation provides a lively mouthfeel. Very light, smooth alcohol warmth is present but well-integrated.
