Quijota Blanca is a quintessential Witbier that captures the rustic charm of its La Mancha roots. It pours with a striking, snowy white head over a pale, turbid body, signaling its use of locally sourced raw wheat and barley. The sensory experience is defined by a delicate aromatic interplay of grainy wheat, vibrant citrus, and soft spice. On the palate, a pleasant initial sweetness gives way to the zesty complexity of Curaçao orange peel and coriander. Appearance. Pale straw to yellow (2-4 SRM). Distinctly turbid and cloudy with a milky shimmer from unmalted wheat starch. Features a dense, snowy white, moussy head with high retention and light lacing.
Aroma. Moderate intensity with a dominant grainy, bready malt character from the raw wheat. Delicate perfumy-lemony coriander notes blend with zesty, citrusy-orange fruitiness. Low spicy-herbal hop notes are nearly absent, allowing the yeast-driven spice to lead.
Taste. Initial bready malt flavor followed by moderate orange-citrus fruitiness and a subtle, lemony coriander spice. Hop bitterness is low and non-lingering, providing a clean balance to the grain sweetness. The finish is refreshingly crisp, dry, and slightly tart with no harshness.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture. High, effervescent carbonation provides a lively, prickly sensation. No alcohol warmth; lacks any astringency or heavy grain husk character.
