This Belgian Dubbel presents a sophisticated winter-warmer character defined by its unique infusion of orange blossom honey and regional malts. Following a patient four-month cold maturation, the profile exhibits a complex interplay of caramelized sugar and toasted bread, enriched by deep floral nuances. The aroma is dominated by dark fruit esters of plum and raisin, complemented by a delicate, peppery spice and a hint of honeyed sweetness. On the palate, the orange blossom honey provides a refined floral lift against a backdrop of rich, malty intensity. Smooth and medium-full in body, it finishes with a clean, moderately dry aftertaste and a subtle alcohol warmth.
Appearance. Deep reddish-copper with attractive mahogany depths (14-17 SRM). Topped by a large, dense, and long-lasting creamy off-white head that leaves persistent lacing. Clarity is excellent due to the extended cold maturation.
Aroma. Moderate to high intensity featuring rich malty notes of toast and caramelized sugar. Pronounced dark fruit esters of raisins and plums are balanced by low peppery phenols. A distinctive floral aroma from the orange blossom honey and local malts adds a layered complexity to the malt-driven profile.
Taste. Initial impression of rich, sweet malt and caramelized sugar, followed by flavors of toast and dark dried fruits. Medium-low bitterness allows the malt and honey to remain prominent, though the finish is moderately dry rather than cloying. Subtle spicy phenols and floral honey notes linger in the aftertaste alongside a clean fermentation character.
Mouthfeel. Smooth, medium-full body with medium-high carbonation that provides a gentle effervescence. Noticeable but well-integrated alcohol warmth consistent with its strength, with a creamy texture and no astringency.
