This Double IPA centers on the vibrant, multi-layered profile of Mosaic hops, delivering a punchy yet surprisingly quaffable experience. A brilliant gold pour gives way to an intense bouquet of tropical fruit, ripe blueberries, and subtle resinous pine, supported by a clean, neutral malt backbone. On the palate, high bitterness is expertly balanced by a dry, crisp finish that emphasizes hop saturation over malt sweetness. Despite its strength, the mouthfeel remains light to medium, offering a smooth texture and gentle alcohol warmth that enhances the complex berry and citrus notes without overwhelming the refreshing character.
Appearance. Gold to light orange-copper (7-10 SRM) with good clarity and a moderate-sized, persistent, off-white head that leaves consistent lacing.
Aroma. High intensity hop aroma featuring prominent Mosaic characteristics of tropical mango, stone fruit, and blueberry. A supportive, neutral, and slightly grainy maltiness sits in the background with a clean fermentation profile and a faint hint of smooth alcohol.
Taste. Strong hop flavor mirroring the aroma with layers of citrus, berry, and resin. High bitterness is present but remains clean and smooth, never harsh. A low, supportive crackery malt character leads to a medium-dry finish with a long, lingering hoppy and bitter aftertaste.
Mouthfeel. Medium-light to medium body with a smooth texture. Carbonation is moderate to high, providing a crisp bite. Features a restrained, light alcohol warmth and no hop-derived astringency.
