This vibrant Wild Specialty Beer, a collaboration between Pyrene and Juguetes Perdidos, explodes with a deep sensory profile driven by blackcurrant, cherry, and blueberry. The appearance is a striking, brilliant crimson with an evanescent pink head. On the nose, intense aromatics of tart dark berries and earthy blueberry skins mingle with the funky, rustic notes of a wild fermentation. The palate is dominated by a juicy, sharp acidity from the blackcurrant and blueberry, softened by the fleshy, rounded sweetness of cherry. A clean, refreshingly dry finish showcases the complex interplay between wild yeast and the concentrated fruit additions.
Appearance. Brilliant, intense deep purple-red hue. The head is moderate, light pink, with fair retention and slight lacing. Usually clear to slightly hazy from the heavy fruit load.
Aroma. High intensity. Dominated by dark fruit: tart blackcurrant, earthy blueberry, and a subtle almond-like cherry note. Complemented by moderate wild fermentation characteristics including lemon-like lactic acidity and a faint rustic, funky barnyard edge. Low cracker-like malt.
Taste. Initial impression is a sharp, refreshing tartness. Deep flavors of blackcurrant and blueberry skin are prominent, with the cherry providing a mid-palate roundness. Very low hop bitterness, as the acidity provides the balance. Fermentation is clean but wild, finishing very dry and crisp with lingering berry tannins.
Mouthfeel. Medium-light body with high carbonation that produces a prickly, effervescent sensation. Minimal alcohol warmth. A slight tannic astringency from the fruit skins adds structure and enhances the dry finish.
