This complex wild ale, an assemblage of three barrels aged between eighteen and twenty-four months, showcases a sophisticated fermentation profile. The use of Brettanomyces Claussenii imparts signature notes of ripe pineapple and tropical fruit, which dance alongside the earthy funk developed during its long slumber in wood. A blend featuring Pediococcus and a raw beer base treated with Lactobacillus introduces a sharp, refreshing acidity that cuts through the rustic, doughy malt character. The result is a vibrant Brett Beer that balances mature barrel-aged depth with a bright, fruity core and a bone-dry, vinous finish.

Appearance. Deep gold to light amber with a persistent hazy clarity characteristic of its raw beer base. It supports a delicate, fine-beaded white head that leaves minimal lacing as it recedes.

Aroma. High intensity with a complex bouquet of tropical fruit, specifically pineapple and peach, driven by Brettanomyces Claussenii. Subtle notes of damp hay, aged oak, and a sharp lactic tang are present, underpinned by a faint, grainy wheat-like maltiness.

Taste. Initial impression is briskly tart and bone-dry. The palate is dominated by zesty citrus and tropical fruit flavors, followed by a rustic, earthy funk. Malt is secondary, presenting as a light, bready foundation. The finish is long and acidic, with a clean, lingering lemony tartness and a touch of woody tannin.

Mouthfeel. Medium-light body with a noticeably crisp and effervescent carbonation. The acidity provides a sharp, tongue-tingling sensation without being harsh. Despite the long aging, it remains refreshing with a very slight, well-integrated alcoholic warmth.
