This complex Brett Beer showcase represents a sophisticated blend matured for two years in oak. The prolonged aging with Brettanomyces 3 vrai and Brettanomyces Claussenii creates a layered sensory experience where rustic funk meets refined fruitiness. On the palate, the Brettanomyces Claussenii provides distinctive notes of overripe pineapple and tropical fruit, while the Brettanomyces 3 vrai contributes deeper layers of barnyard, wet hay, and earthy leather. The two-year barrel rest ensures a bone-dry finish with a whisper of woody structure. It is a masterful example of patience, balancing bright ester-driven fruit with the nuanced, savory depth of well-aged wild fermentation.
Appearance. Pours a hazy, golden-straw color (4-6 SRM) with a fine-beaded, white head that dissipates fairly quickly into a thin ring. Effervescent carbonation is visible through the slight yeast haze.
Aroma. High intensity with a complex profile of tropical fruit, specifically pineapple and mango, merged with significant barnyard funk. Secondary notes of leathery earthiness, dusty hay, and a very subtle hint of toasted oak from the two-year barrel aging. No hop aroma or diacetyl present.
Taste. The initial impression is dry and fruity. Pronounced flavors of tropical stone fruit and pineapple are immediately followed by a rustic, earthy funk and light cracker-like malt. The finish is bone-dry and crisp with a light, non-lactic tang. Bitterness is low, serving only to balance the minimal malt sweetness. Aftertaste lingers with notes of hay and dried fruit.
Mouthfeel. Light-bodied with a crisp, highly attenuated character. Carbonation is moderately high and prickly, enhancing the dryness. There is no perceived alcohol warmth, and the texture is lean but not watery, with a very faint woody astringency.
