Deze RIS, die 13% is, is zoals Tom Balerin: groot, krachtig en extreem zachtaardig. In samenwerking met onze Montpellier-vrienden van ASTERE COFFEE bedachten we een recept dat onze twee vaardigheden combineert: brouwen en braden.

Dal colore scuro, quasi nero, naso e palato sono pervasi dall’aroma di caffè che risulta più intenso e duraturo grazie alla fermentazione dei chicchi di caffè in ambienti privi di ossigeno. Sentori torrefatti di malto, caffè, note di caramello , cerali, biscotti ed anche una lieve acidità funky (conferita dal caffè), sono letteralmente protagonisti sia dell’aroma che del gusto. Ricca, amara e leggermente acidula nel finale.

A collaboration with Astère's Tom Ballerin (Best France's Barista 2019), we added Brazilian and Indonesian Coffee to this brew to add some cereals and biscuits notes (as if there wasn't enough before) and some subtle funky acidity.And yes we pourred espressos all night long...Named after lyrics from the band Parkway Dr

Imperial Stout Espresso Coffee

Un gros travail de sélection a été effectué avec les torréfacteurs d’Astère Coffee.
Au final : une infusion de 10 kg de café en cuve et 2kg de café fermenté coulé en espresso pour accentuer le côté onctueux et crémeux de la base.
