Pressure Drop Brewing
This third iteration of Cheese is a vibrant Hazy IPA that showcases the synergy of Mosaic and Strata hops. This version leans heavily into a bright citrus profile, dominated by zesty grapefruit and fresh lime peel, underscored by succulent layers of mango and ripened apricot. The sensory experience is defined by its juicy intensity, supported by a neutral, bready malt backbone that allows the heavy dry-hopping to shine. A pillowy softness on the palate complements the tropical depth, leading to a smooth, low-bitterness finish. It perfectly captures the style’s signature lush fruitiness and opaque, glowing appearance.
Appearance. Pours a hazy, opaque straw-gold with a radiant glow. It is topped by a dense, white, meringue-like head that exhibits excellent retention and leaves significant lacing on the glass.
Aroma. High-intensity hop aroma featuring a complex blend of citrus and tropical fruit. Pronounced notes of grapefruit and lime zest from the Strata hops mingle with Mosaic’s signature mango and apricot esters. Background notes of clean, bready malt are present, with no caramel or toast character.
Taste. Explosive hop-forward flavors mirroring the aroma, led by sharp lime zest and juicy grapefruit. A mid-palate of stone fruit and tropical mango provides a rounded sweetness. The malt character is low and grainy, providing a neutral base. Perceived bitterness is low to moderate, well-integrated and never harsh, finishing off-dry and exceptionally smooth with a lingering tropical aftertaste.
Mouthfeel. Medium-full body with a soft, pillowy texture. Carbonation is moderate, contributing to a smooth mouthfeel without any astringency or raw starchiness. A light, well-integrated alcohol warmth is present.
