Portolobo Belgian Tripel offers a rustic and aromatic interpretation of the Belgian Tripel style, distinguished by the use of a unique wild yeast strain harvested from its local park environment. This yeast produces a vibrant profile of ripe stone fruits and subtle vanilla, complemented by the herbal, citrusy lift of cilantro. Despite its lower 6% ABV, it maintains a medium body that feels substantial yet remains highly drinkable. The delicate Pilsner malt backbone provides a soft, grainy sweetness that balances the yeast-driven spice, finishing relatively dry with a restrained bitterness that highlights the beer's fruity and floral complexity.
Appearance. Presents a deep yellow to light gold color (approximately 5-6 SRM). It features excellent clarity with a steady stream of effervescent bubbles leading to a long-lasting, rocky, creamy white head that leaves intricate lacing.
Aroma. Moderate to high intensity featuring a complex blend of fruity esters, particularly ripe pear and apricot. Distinctive notes of herbal cilantro and a touch of vanilla sweetness are present. The wild yeast provides a spicy, peppery phenolic character, while the malt remains light and grainy-sweet.
